4 boneless, skinless chicken breast fillets (fat removed)
salt and pepper
1 cup mayonnaise
1 cup grated Parmesan cheese – real cheese, not grated
1 teaspoon Italian seasoning
1 teaspoon garlic powder
• Lightly coat a 9-by-13-inch baking dish with nonstick cooking spray.
•Distribute the chicken breasts evenly among the prepared bowls.
Season with salt and pepper.
•In a small mixing bowl, mix mayonnaise.
Mix Parmesan cheese, Italian seasoning, and garlic powder evenly.
• Pour the mayonnaise mixture in small portions evenly over the chicken and use a spatula to spread it around until the chicken is completely covered. • Bake chicken at 400° for 20-25 minutes.
If the cheese rind becomes too brown before cooking the meat, cover loosely with aluminum foil.
Remove the baking dish from the oven and let the chicken rest for 5 minutes before serving.
