Chicken salad sandwich
Ingredients
2 cups cooked chicken breast (sliced)
1/2 cup mayonnaise (you can also use a lighter version for a healthier option)
2 tablespoons Greek yogurt
1/4 cup finely chopped celery
1/4 cup red onion, chopped
1/4 cup cucumber (diced)
1 tablespoon Dijon mustard
1 teaspoon lemon juice
salt and pepper taste
8 slices of whole wheat bread
Lettuce leaves and tomato slices (for garnish, if desired)

Instructions :
Shred the cooked chicken: Start by shredding the cooked chicken breast. It’s even more convenient to use leftover rotisserie chicken. Cut the chicken into bite-sized pieces.
Prepare salad mix: In a mixing bowl, combine shredded chicken, mayonnaise, Greek yogurt, celery, red onion, cucumber, Dijon mustard, and lemon juice. Mix everything well until everything is well mixed. Season perfectly: Season the chicken salad mixture with salt and pepper. Adjust the seasonings to your liking to create the flavor you like.
Assemble the sandwiches. Slice a slice of whole wheat bread and place a lettuce leaf on top. Spoon a generous amount of the chicken salad mix over the salad. If desired, add tomato slices for extra freshness. The cherry on top: Top with another piece of whole wheat bread to complete the sandwich. Press down gently to ensure all the delicious flavors are thoroughly blended.
Slice and serve: Carefully cut the sandwich in half diagonally, or into smaller pieces if desired. Your chicken salad sandwich is ready!
