EASY FRIED CHEESE BITES
10 ounces (or 10 sticks) mozzarella strip cheese
1 cup Italian breadcrumbs
1 cup flour
1/4 cup milk
cayenne pepper (optional)
Prepare a cutting board and cut the cheese sticks into bite-sized pieces.
In a medium bowl, whisk together the eggs. Add the milk and whisk again to combine the two ingredients.
Set two more bowls aside. Put the flour in one and the bread crumbs in the other. Place the bowl of egg and milk mixture in the center of this line so there are three bowls in a row (flour, egg, and breadcrumbs).
Take a piece of mozzarella cheese. Dip it into the flour and immediately into the egg mixture. Then roll the cheese pieces in the breadcrumbs. Continue this until all cheese pieces are covered. As soon as it’s finished, you can serve it on a plate.
Heat vegetable oil in a medium skillet (about 2 inches high) to 350 degrees. (To test this, place the handle of a wooden spoon in the oil. If bubbles roll over the handle, it’s ready.)
Remove the plate and place a paper towel on top.
Add 5-7 pieces to the oil and leave for about 30 seconds. Be sure to store them separately so they don’t stick together!
Fry the mozzarella until golden brown (about 30 seconds is recommended). Remove the pieces from the oil using a slotted spoon and place on paper towels.
Repeat this process in different batches until all pieces are fried.
Serve immediately with pasta sauce or just as is.
