  • 2-pound New York strip steak (2 steaks) or ribeye or top sirloin steak (1-pound steakeach, 1 1/4-inch thick)
  • 1/2 tablespoon vegetable oil or hot cooking oil such as canola or extra light olive oil
  • 1 1/2 tsp sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, peeled and quartered
  • 1 sprig of fresh rosemary

Remove steaks from refrigerator and allow to come to room temperature before cooking (30 minutes for thin steaks, about 1 hour for thick steaks).
Use a good heavy skillet, preferably a cast iron skillet or ST grill.
After heating, be sure to apply oil to the frying pan! (medium to high heat)
Season both sides of the steak liberally. McCormick, Weber, and Steakhouse are all good brands and can probably be found at your local grocery store. Once the steak is in the pan, do not touch or turn it for at least 3-4 minutes until a nice crust forms. Flip the steak over and grill the other side for 3-4 minutes. If the steak is thick, it should be cooked in a hot oven preheated to 375°C for about 5-10 minutes to get a medium steak.
