Mini Chicken Meatballs
ingredients
2 boxes of chilled crackers (8 per box)
1/2 pound boneless, skinless chicken breasts (about 1 large breast)
1 package frozen peas and carrots
1 can of soup

Preheat oven Heat to 350 degrees F and spray the muffin tin with
cooking spray. Cut the chicken into small pieces. Cook over medium heat until no longer pink. Add the spices (I used garlic powder, onion powder and a pinch of salt but you can use whatever you like). Take it off the stove.
Stir the vegetables and soup into the pan with the chicken. Put aside.
Open the biscuits and flatten them so they are thin enough to fit in the molds.Fill biscuits with chicken mixture and bake at 350ÂșC for 30-35 minutes or until biscuits are golden brown.
If you are only using one tin of biscuits, keep the recipe and you can freeze any
