Grammie’s Coconut Pie

 

Ingredients;

4 tablespoons sugar
5 tablespoons cake flour
1/2 teaspoon salt
2 cups milk
3 pounds egg yolks

lightly beaten

1 1/2 cups grated coconut
2 teaspoons vanilla
1 baked crust

meringue filling

2 pounds egg whites
4 tablespoons sugar

instructions;

1 Mix sugar, flour and salt in a water bath, add milk and yolks; Mix well. Quickly place over boiling water & Cook for 10 minutes, stirring constantly, remove from the boiling water and add 1 cup coconut and vanilla.
2 Allow to cool slightly and then shape into a cake.
Beat 3 egg whites until stiff. Add 2 tbsp sugar.one at a time, beating after each addition until egg whites are on top.
4 Spread the meringue on top and spread around the edges of the cake. Then use a knife or spatula to form peaks into the dough. Top with a small amount of grated coconut and bake the
in the oven at medium heat (350 degrees) for 10 minutes until golden brown.
5 Remove from the oven, allow to cool completely, then place in the refrigerator.
6 Slice and serve
