Vegan Chocolate Mousse
Instructions
Soften the chocolate in a double boiler or within the microwave. To collect a double boiler, grab a heatproof bowl that can be nestled into a saucepan—it ought to hover above the bottom of the pan. Fill the pan up with some inches of water. Maintain the water at a speedy simmer. Area the chocolate in the bowl and whisk regularly till melted, ensuring no water comes near the chocolate.
To melt in the microwave: Chop chocolate into small pieces and heat within the microwave on excessive energy in 30-2d intervals, stirring after each round.
Meanwhile, cowl the dates with freshly boiled water. Soak for 15 minutes, then drain and put off the pits.
If using refrigerated tofu, scoop it out of its package and degree out 12 oz.. Do no longer pat dry or try to take away extra water.
In a food processor or high-powered blender, add the tofu with about 3 tablespoons of water that has gathered; if now not sufficient water has accrued, upload 3 tablespoons of filtered water.
Add the dates, maple syrup, cocoa, vanilla, cinnamon (if using), and ½ teaspoon sea salt. Combo surely nicely till the dates are absolutely pulverized and the cocoa has been jumbled in, scraping down the edges as you go.
Now add the melted, cooled chocolate and mix until absolutely easy and creamy, scraping down the sides as you pass. Flavor, including more salt to flavor (i really like including an additional ¼ tsp salt for that candy-and-salty taste). Divide among 6 to eight ramekins or small dessert glasses and relax for at least 1 hour to thicken (don’t keep it all in one massive container, as it appears to thicken it more).
