Cevapi Balkan Beef Sausages
Ingredients
- 1 kg of ground beef
- 4 cloves of garlic
- ½ finely chopped Pieźnica parsley
- 50 ml of cold water
- 1 teaspoon of paprika
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 tablespoons Olive Oil

Instructions
Place the ground beef in a large bowl with the garlic, parsley, paprika, salt and pepper. Mix by hand until you get a coarse paste.

50ml cold water, 1 teaspoon baking soda
Add the baking soda mixture to the meat mixture and massage until well combined, a good 5 minutes. Tip: This process is important to emulsify the mixture and give it that smooth, elastic texture we love about cevapi!
Take a small handful of the mixture and divide it first into a ball and then into a sausage. Flatten each end and place on a plate. The length should be about the width of your hand.
Light your charcoal grill OR heat vegetable oil in a large cast-iron skillet or skillet over medium-high heat. Fry the cevapi for a few minutes on each side until golden brown.Tip: Cut a piece in half to check if the inside is cooked. Light pink is suitable for beef sausages.
1 tablespoon olive oil
After cooking, it is recommended to serve hot with fresh rabbit bread, chopped raw onions and ajvar paste.
