Creamy Beef Taco Soup

INGREDIENTS

  • 2 lbs ground beef (80/20)
  • 1 small onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves garlic (chopped)
  • 24 oz beef broth
  • 28 oz tomatoes per year Cubes (crushed tomatoes go also)
  • double taco seasoning mix (or 2 packs at the store)
  • 4 oz salsa
  • 4 oz mild cream cheese (light cream cheese can be used)
  • 1 cup heavy cream (½ cup fat can also be used halved)
  • 2 cups cheddar cheese

INSTRUCTIONS

Heat ground beef, onions and peppers over medium heat until beef is no longer pink. Add
garlic cloves, beef broth, tomatoes, salsa, and taco seasoning. Stir to combine.
INSTANT COOKER: Set cooker to high pressure – 2 minutes. Allow the pressure to drop naturally at the end of cooking.
HOB: Bring to a boil, cover and reduce heat to low. Continue cooking for 30 minutes.
Add the very mild cream cheese, cream and cheddar cheese to the pan. Stir until cheese melts and soup is incorporated.
Customize the seasoning, serve and top with your favorite taco toppings.Enjoy!
