German Potato Pancakes
Ingredients
▢1 pound potato
▢1 small onion
▢pinch salt
▢pinch pepper if you want savory pancakes
▢3 tablespoons flour
▢1 medium egg
▢oil for frying

Instructions
Wash and peel half a kilo of potatoes and peel a small onion. Grate
potatoes in a bowl using the grater side (which everyone knows for grating cheese) on a four-sided grater. Also grate the onion. If grating the onion doesn’t work, you can chop it very finely with a knife.
If there is too much water in the potatoes (droplets when squeezing by hand), drain some of the water from the potatoes.
Add a pinch of salt, a pinch of pepper if you like the donuts spicy, the flour and an egg.
Mix everything together until the mixture is well blended. It works best if you do it with your (clean) hands.
Heat two tablespoons of oil in a pan and add two tablespoons of pancake batter. Make sure the pancake is not too thick or too big to ensure a good fry.You probably won’t be able to put more than 2-4 pancakes in the pan at a time.
Fry until golden on both sides (3-4 minutes on each side), then remove from the pan. Place them on a paper towel or something similar to allow the oil to absorb. You can then place the pancakes in the preheated oven to keep them warm.
Repeat the process with the remaining dough.Add more oil if necessary.
Serve immediately with applesauce for a sweet taste, or sour cream, yogurt, or cottage cheese for a savory taste.
